Keep calm and eat your kale salad

I used to hate kale. I could never think of a good salad with kale in it. If I had to include green veggies in my diet, I would go with mixed greens, lettuce or arugula, but never kale. Until now.


Kale provides you some special cholesterol-lowering benefits if you cook it by steaming. Raw kale is recognized as providing comprehensive support for the body’s detoxification system. Including kale as one of the vegetables you eat on a regular basis( 4-5 times per week ), provides you fantastic health benefits. Kale’s risk-lowering benefits for cancer have recently been extended to at least five different types of cancer.

My recipe is fresh, super-easy and super-healthy. If you like citrus flavored salads, go for it! It came amazing!


  • 1 bunch kale ( stalks removed and leaves thinly sliced)
  • 1 lemon
  • 1/2 orange (I used blood orange for more color and juice)
  • 1/4 cup extra virgin olive oil
  • kosher salt
  • 2 tbsp parmesan cheese
  • 2 (peeled and boiled, ready to use) beets
  • 1/2 avocado
  • 3 small radishes
  • 1/2 carrot
  • 2 tbsp sliced roasted almonds
  • 1/2  cup of crumbled blue cheese


In two small salad bowls put the washed kale. Add the squeezed lemon juice. Massage until the kale starts to soften and wilt, 1- 2 minutes. Add salt and olive oil and set aside.

Cut the radishes in round and thin slices. Add 1/2 of small carrot. Use a grater and add the thinly shredded carrots to the salad bowls.

Don’t forget the avocado! Always makes any salad so delicious.

I chose adding beets as well because every salad needs that sweetness to balance everything else. Beets  are wonderful tonic for your body if you are doing body cleanse, they are full of vitamins and minerals. Add parmesan cheese. Then get your daily dose of proteins by adding sliced almonds on top.


Color your food by adding beets to it 🙂



At the end, add the crumbled blue cheese. Use an orange peel for some aroma and leave a peeled orange slice on side or put it in the salad.


Always have a bottle of your favorite wine so you can have a full experience. Pinot Grigio and Chenin Blanc pair well with salads. If you like red wine like me, grab a bottle of medium body Malbec. The perfect combination, believe me! Share with friends or family and enjoy!
